At the foot of Jebel Zerhoun, lie the Roman ruins of Volubilis. The remains of Volubilis, identified by Tissot in 1874, bear witness to the grandeur of the former residence of King Juba II. Afterwards we will visit a vineyard for wine tasting with goat cheese and a light lunch. We will then drive to the oldest of the Imperial cities, Fes. This evening enjoy dinner at a local restaurant. Overnight in Fes
Day 3: Fez (B/L/D)
Location: Fez
This morning participate in a cooking work shop at the Riad Palais Amani, a traditional house centered around a patio planted with orange and lemon trees. How the Jewish presence came about in Morocco is a source of historical debate but their presence in the country for over two thousand years is undeniable. This presence has not only marked Moroccan culinary traditions with flavours, spices, and methods, but many Jewish rituals and traditions are infused with Moroccan history, culture, even the language to this day. The aim of todays Moroccan Jewish Culinary Heritage Workshop is to introduce you to some of the dishes that marry Jewish celebrations throughout the world with Moroccan cuisine. You will learn how to create a dish, passed down through the generations. You will visit the medina and the souk with the chef to pick the best ingredients before returning to the Palais Amani to prepare your food. Spend the afternoon exploring Fes, Moroccos spiritual and intellectual capital and home to the largest old Medina in the world. Begin with a panoramic view of the old medina before venturing to the heart of the medina. The citys numerous monuments have thousands of stories to tell visitors. Youll stop to see Jemaa Karaouyine, the first university established in the world, and then Madrasa Bou Inania, a beautiful 14th century school that is still a center for education and worship. The Madrasa features an open courtyard with exceptional handcrafted walls of tile, plasterwork, and arches. The workmanship of cedar and green stone motif is exquisite, as is the minaret towering above. Nearby is the gorgeous Bab Boujloud, or Blue Gate, the monumental entrance to the Old Medina. Seeing the minarets and the houses through its arched opening makes an exciting introduction to Fes. As you enter the gate, note that the color of the mosaics change: the outside blue reflects the colour of Fes, while the inside green is the color of Islam. Youll visit the Tanneries, where leather is seen soaking in the colourful vats of dye, and the artisan quarters where the craftsmen of the El Attarine Souks offer a non-stop spectacle. For hundreds of years such work has been regulated by traditional guilds, ensuring that its quality is worthy of the city. Each district has its own specialty: cobalt blue enamelled pottery, carpets, wrought iron, etc. In the Medina – a labyrinth of narrow, winding streets – the alleyways are crammed full of stalls and workshops. This is the famed commercial centre and shoppers paradise. Beautiful goods beckon from this incredible maze: cotton fabric, silk, brocade work, leather slippers, and much more.  This evening enjoy dinner at the Riad.
Overnight in Fes
